Pinyon Brings a Taste of the Mediterranean Coast to Old Town Scottsdale

October 23, 2025

Pinyon, the latest concept from the team at Hi Noon Hospitality, officially opens its doors on October 29th, bringing the flavors, warmth, and spirit of coastal Mediterranean dining to the heart of Arizona.

Located along the park in Old Town, Pinyon is more than just a restaurant — it’s a celebration of community, connection, and the joy of gathering around the table.

“After traveling through the Mediterranean Basin — from the coasts of Spain and Italy to the markets of Morocco and Turkey — we wanted to capture that sense of magic and hospitality we experienced along the way,” said Adam Strecker, CEO and founder of Hi Noon Hospitality. “Every detail at Pinyon was designed to make guests feel that same sense of discovery and warmth.”

A Design That Transports You

Pinyon occupies a beautifully reimagined building that underwent a multi-million-dollar transformation by Aline Architecture, Social Design Studio, and MCI Builders. The space combines craftsmanship and modern elegance — think warm woods, brass lighting, checkerboard marble floors, and cozy red leather booths reminiscent of a classic European bistro.

The main dining room opens to a European-style patio, complete with an antique fountain surrounded by olive and mesquite trees — the perfect spot to dine under the desert sky. Upstairs, guests can enjoy park views and a refined indoor–outdoor bar with brass accents and alabaster lighting that cast a soft evening glow.

Art also plays a starring role throughout the restaurant, featuring works by local painter Mike Carson and New Orleans artist Rami Sharkey, each piece adding character and storytelling to the space.

Mediterranean Cuisine with Heart

At the heart of Pinyon’s kitchen is a Josper Grill — a hand-forged, live-fire oven from Barcelona that brings out the natural flavor of every ingredient. Guests can look forward to dishes like whole roasted turbot, prime flat iron, and charcoal-grilled skewers of Sea of Cortez shrimp or tenderloin.

The menu draws inspiration from the 22 countries bordering the Mediterranean, featuring crudos, handmade pastas, seasonal salads, and an array of small plates designed for sharing. The Hummusiya menu — a rotating selection of hummus and dips such as baba ganoush, pistachio labneh, and fava bean dip — invites guests to linger and graze over warm, house-baked pita.

Seafood lovers will find plenty to savor, from yellowtail crudo and stuffed calamari to linguine and clams and Dungeness crab. Fresh oysters and chilled seafood selections round out the coastal offerings.

A Bar That Speaks the Language of Leisure

Pinyon’s bar program celebrates the leisurely elegance of Mediterranean life with a lineup of spritzes, craft cocktails, and island-inspired wines from Corsica, Sicily, Sardinia, and the Eastern Mediterranean. Guests can also enjoy a curated wine list from Italy, Spain, France, Israel, Armenia, and beyond — plus aperitifs, amaros, and liqueurs perfect for sipping.

A Gathering Place for Every Occasion

Pinyon also offers private dining for intimate celebrations, cocktail soirées, and park-side gatherings. Each space is designed with the same attention to detail — fostering connection and conversation over vibrant, family-style meals.

Grand Opening Details

To celebrate its debut, Pinyon is offering an exclusive in-person promotion: purchase $100 in Pinyon gift cards and receive a $20 bonus card, available through October 28th (excluding October 18).

Pinyon is located at 7363 E. Scottsdale Mall. Lunch is served daily and dinner nightly. For reservations or more details, visit pinyonrestaurant.com.
