This highly anticipated modern American restaurant with coastal Mediterranean influences is preparing to open its doors in North Scottsdale, and the team is giving us a sneak peek at the menu and cocktail lineup ahead of its debut.
Founded by Eric J. Greenwald, Mark Goldberg, and Executive Chef Christopher Brugman — known for his appearances on Food Network’s Chopped, Food & Wine Magazine, and James Beard Taste America — Heritage promises a dining experience that blends comfort, creativity, and world-class flavor.
The menu highlights ultra-fresh seafood, premium meats, and seasonal produce sourced from local farms. Chef Brugman’s globally inspired dishes pull flavors from the coasts of Southern Italy and Spain — bold, colorful, and full of heart.
One of the showstoppers? Brugman’s Piatta, a signature bread recipe perfected over 14 years. Made with artisanal Italian flour and baked in an eight-foot hearth, it takes three days to ferment to perfection — a true labor of love.
Here’s a taste of what to expect:
Small Plates: Aged beef tartare, oysters (grilled or freshly shucked), mezze platter, and Spanish octopus.
Farmers Market Picks: Heirloom tomato with burrata, Duncan Farms melon salad with pistachio and melon vinaigrette, roasted cauliflower with brown butter and Sardinian vinaigrette.
Artisan Pizza + Pasta: Lobster “fideo” paella with saffron and lemon, Dungeness crab tortelloni, sausage + fennel pizza with Calabrian chili honey, and a rotating market pizza.
Heritage Cuts: Linz Heritage cowboy ribeye, Barolo-braised short rib, whole market fish, and Two Wash Ranch half chicken.
Desserts: Banana & Nutella tart, passion fruit curd with coconut sorbet, and classic tiramisu.
Kids Menu: Elevated yet approachable options like chicken parmesan, mac & cheese with veggies, and grilled chicken with mashed potatoes.
“Our menu is designed to bring people together through food that feels familiar yet exciting,” said Chef Brugman.
The beverage program, created by Mitch Lyons and Libby Lingua of Highball and Two Hands Phoenix, is just as creative as the food. Expect twelve signature cocktails crafted with precision, seasonal ingredients, and a balance of bright, bold, and refreshing flavors.
Guests can even enjoy a fun “Choose Your Own Adventure” option, where you pick the base spirit for certain drinks — perfect for a custom cocktail moment.
“In creating this program, we wanted each drink to complement the food and enhance the overall experience,” said Lingua.
